Date & Nut Balls
Ingredients:
*feel free to combine different nuts and dried fruit to make up that 1 cup
1 cup nuts (cashews, walnuts, pecans, etc.)
1 cup pitted dates
1 cup dried fruit (cranberries, raisins, goji berries, blueberries, etc.)
1/3 cup pumpkin or sunflower seeds
3 Tbsp chia seeds
2 Tbsp ground flax or hemp seeds
1/2 tsp cinnamon
1 tsp vanilla extract
Directions:
If dates seem tough and not super juicy, soak them in hot water for a few minutes while you gather the ingredients. Drain before using.
Add dates and nuts to a food processor and process until they become βone".β
Add remaining ingredients and process until combined. It should be sticky and workable. If it seems too dry, add a splash of water, if it seems too wet, add some more ground flax seeds.
Roll out into little balls. Store in a single layer in the fridge. If freezing, freeze individually on a plate and then add to a mason jar or bag.
** Favorite variations:
Blueberry Lemon-use dried blueberries as the dried fruit and some lemon zest for extra flavor!
Apple Goji Berry-use dried apples and goji berries as the dried fruit
Superfood: use goji berries as the dried fruit, stir in cacao nibs at the end.
