Chickpea "Gyro" Wraps

Ingredients:

1 Can of organic BPA-free chickpeas, rinsed* (about 1.5 cups)

1 Garlic clove, minced

2 tsp Dried oregano (italian herb mix works well too if you don’t have plain oregano)

2Tbsp EVOO

2tsp Red wine vinegar

Salt and pepper

1/2 Cucumber thinly sliced into half moons

1/4 Red onion, thinly sliced

1 Tomato, thinly sliced

1 Cup of shredded lettuce

Tortillas (Siete almond flour tortillas are my favorite!)

1/4 Cup of Kite Hill tzatziki sauce (or homemade—see below)

*Eden’s beans are the only canned beans I buy regularly. They are the safest canned bean because they are BPA, BPS, and pthalate free. Lots of companies who market as BPA free use BPS as an alternative, which may still be very harmful to our health there just isn’t much research yet. Additionally, Eden soaks and pressure cooks their beans, inactivating the lectins and making them easier to digest. They also add kombu to their canned beans for flavor, digestability, and to make added salt unnecessary. Read more here.

Directions:

  1. Heat a saucepan on medium heat. Once heated, add a little oil and garlic. Saute for a minute. Add chickpeas, salt, pepper, and oregano. Let cook for a few minutes to heat the chickpeas and incorporate the flavors. If it looks dry, add a TINY splash of broth or water.

  2. Remove from heat. Add oil and vinegar to the chickpeas and mash with a fork or potato masher. This is just to break them up some, I usually do it until there’s only a few whole chickpeas left.

  3. Assemble the wraps. Spread tzatziki directly onto the wrap so the ingredients stick. Add remaining ingredients to your preference and wrap it up!

Homemade TZATZIKI Sauce: Add 1 cucumber (peeled, seeded, and finely chopped) to a colander and toss with a generous amount of salt. Let the cucumbers “sweat” for 10-15min. Rinse and drain on paper towels. Mix together 3/4 cup of your favorite plain unsweetened yogurt, 1 minced garlic clove, 1Tbsp lemon juice, 1Tbsp EVOO, 1tsp fresh dill, 1tsp fresh mint, and a sprinkle of pepper. Stir in the cucumbers.
